true grass farms

.

A visit to True Grass Farms is like a step into the future, backwards. The young farmers and chefs that are involved in this innovative enterprise bring with them a strong understanding of tradition in both food and farming. They are young, energetic and inspired. Lunch at the farmhouse was delight, the food was delicious and environment evocative of an old time farmhouse. But Guido's farming practices and philosophy on farming animals and stewarding the land belong very much in the future of farming. Check them out.

quince

membrillo made with quince from Amy's garden.

... which leads me to this photo, taken in kenya, of a man making an Arab influenced Swahili sweet called Halua-. It looks like membrillo, and tastes similar, however there is no quince ; only flower, lemon and sugar. It has to be stirred for hours just like membrillo.

Korea!

I love going to foreign places- its what inspires me. I can put all my curiousity to work and discover so much. Visually - its always a feast - no matter where it is- the new and different to my eyes is what makes me happy. Korea- no exception. After 4 days of work I had one afternoon and one morning to explore. Naturally the food is what I sought out.

The markets are lively, colorful, full of people and exotic foods. Seoul is alive at night, the food- delicious. Thanx to Marcus at O'ngo Food for the wonderful tour of the night market in Seoul.
And Lee Younhee from Lazybird in Incheon for the last minute whirlwind tour of Sorea fish market.

Sheep, cheese

Marcia Barinaga loves her sheep!- She declared as much as we were chatting in her barn, located on the east side of Marshall's rolling, grass covered hills. A short walk west to the top of the hill, the entire Tomales Bay stretches out below. In this amazing location she is making amazing cheese ... more on that later. Last friday we were looking the cheese production and the place, and her beautiful sheep!
